Authentic wok–exactly the type Chinese people use

Yup. Finally I have my authentic carbon steel wok. This is the exact same wok they use to cook my favorite dishes here in Singapore. I have a carbon steel wok already, the one I bought from Amazon.com and shipped to Philippines. It is carbon steel too, a very nice quality wok but that one came from America and I just have to have what Chinese people use.

I bought this close to where I live now. Only SGD 20. The problem is with the seasoning process. You cannot really use a newly bought wok as is because it has an industrial coating that prevents it from rusting, it is poisonous. I know from experience that seasoning a wok is not easy especially for an inexperience person.

Wok hei crazy

Wok hei

Wok hei (simplified Chinese: 镬气; traditional Chinese: 鑊氣; Jyutping: wok6 hei3; romanization based on Cantonese; the second character is qi in Mandarin, and thus wok hei is sometimes rendered as wok chi in Western cookbooks) is the flavour, tastes, and “essence” imparted by a hot wok on food during stir frying.

To impart wok hei, the food must be cooked in a wok over a high flame while being stirred and tossed quickly. In practical terms, the flavour imparted by chemical compounds results from caramelization, Maillard reactions, and the partial combustion of oil that come from charring and searing of the food at very high heat in excess of 200 °C (392 °F). Aside from flavour there is also the texture of the cooked items and smell involved that describes wok qi.

Been crazy for this wok hei for a long time now and have done some pretty crazy stuff just to have my fill. I’ve bought a pretty expensive wok in Amazon but I love it so it’s very much worth it.

Feeling guilty!

Some women are passionate with shoes. Or bags. Or make-up.

While I am drawn like a magnet to kitchen wares, gadgets etc. Stuff I could use in the kitchen.

Since I just stayed home today to rest, I had a lot of time to surf the net. I again read in Cecile’s blog (Chuvaness) about Johnny Air. I’m now even more convinced that there’s a better way and cheaper way of shipping stuff from US to Manila.

So I checked Amazon.Com. My mistake. ;) I found what I’ve been wanting to have for so long.

WOK!

Chinese WOK.

The reason why I spent a lot of dollars on Nasi Goreng. I just love that wok flavor. I love Singaporean (Chinese-Indo-Malay-Indian Mix) Cuisine.
