Linguine in Pinoy Style Sauce

Alright, this is just like regular pinoy style spaghetti but I used linguine instead. I have always been using different pasta shapes ever since and there was a time that linguine became a favorite. This pasta made a comeback a few weeks back and I used it for this “spaghetti” dish and I also used it for chicken sopas and I actually liked it.

I cooked this at the same time with cinnamon muffin. Carbohydrates overload but they kind of goes well together. I can actually win a trophy at AwardsForAnything.com was what my cousin said for all these dishes I am cooking which is very much appreciated by people who get to taste them.

I need a driver

I am in my third trimester and even though I can still drive myself to wherever I need to go, fatigue has been a challenge for me lately. There are some businesses I need to do up north and we live down south and not to mention Manila traffic is such a pain in the arse so it’s not surprising that I’m dreading driving my way there. Also a big challenge for me are those trucks and buses who will definitely benefit from the best trucking gps there is. They always seem to be lost or they’re just ignorant with traffic laws.

And next month I’m about to deliver our baby and no one but me knows how to drive at home. Can I drive myself to the hospital while in labor? This is frustrating. Someone please help…

My baby’s things: Cloth Diapers

Alright I have to “hide” my mess that’s why….

Even before I finally got pregnant I already have some blogs I follow and one of them is a mommy blog. One time she mentioned about how she’s then using some cloth diapers and how her son likes it. I found it cute but I didn’t really pay much attention then as I didn’t see why it would be important to me. That is until I got pregnant and we started to buy stuff for the arrival of our princess.

Shawarma Burger

It was only a few weeks ago when I kind of had a minor obsession with my home made burgers. Well home made because I made the patties from scratch. I love how I have full control of every ingredient I put in there. Of course being pregnant right now I have to be wary of what I put in my mouth.

Then one day I run out of burger buns but I have all other ingredients like the beef pattie, cheese, tomatoes and cucumber. Then an idea came to mind… I miss chappati! I could use chappati in place of burger buns and I could easily make it at home as I always have flour on hand. I cut the patties into smaller cuts and assembled everything on top of the chappati. Then I realized it is kind of like shawarma. It is a shawarma but is also a burger. Haha I liked this very much. Especially after all the hunger I felt after I looked for the misplaced leather repair kits. I truly believe food tastes better the more hungry you are. Try it.

My baby’s things: Pink Play Pen

Yes it’s pretty in pink. 😉

So this our daughter’s play pen. This has a mosquito net, and changing table (?) that you can attach on top of it. Bee and I both decided on this one as it’s really pretty and perfect for a baby girl. Oh it’s actually Mommy who wants us to get a play pen instead of a crib/cot. I originally wanted a steel one which I really fell for but Mommy said it might not be wise to have since babies will try to stand up on their own while they don’t have steady balance so most likely she’ll fall into one of those railings and she’ll have a bump or worse she might have a bloody mouth, literally.

Again, I am so happy with how well my husband has been so preoccupied with all things for our baby. See he even assembled this already. Then he will have to pack this again to bring here in the Philippines. It’s like looking at his fantasy baseball trophies when he just bought another baby gear. Then he will find something he likes better and will show it to me and he would want to buy that again haha. He’s so cute. I love this phase of my life, I am always happy. Hmmmn say 90% of the time? Thank you very much my dear Lord. All of these is because of You.

My baby’s things: Car Seat

Well we still have to wait for a month before she is ready to meet us all but we have already bought her her things. It’s fun buying her clothes. Shopping for her clothes was delegated by myself to myself and Mommy while buying her playpen, stroller and car seat is my husband’s responsibility. It’s so cute how Bee (my husband) would do his research first and changes his mind a lot of times before buying something. Of course I need to approve the appearance first haha, the technical part of it is his job, but really we have to both agree on appearance. We want what is best for our princess. 🙂

Of course price is a big consideration for us so we decided to buy a car seat she could use until she’s about 3 to 4 years old.  For some reason my husband wants orange for our baby haha.. When I was in first grade and you asked me what my favorite color was, I’d say orange so I have no objection about this.

I love all these new stuff we’re having for the baby but for myself I would really appreciate some really good quality utility knives. One’s home should have a good set. For now I’m so happy with all our purchases even though all the spending has reminded me just how pricey it is to have a child but I wouldn’t have it any other way. I waited for our baby girl for a decade and a half so you won’t hear me complaining!

Finally the sun is shining

Whoah after almost two weeks of strong rains and floods (thank God we were safe from floods in our village), the sun finally made it’s awaited appearance today.

I am so grateful that we were spared. We actually had it easy. No floods, and we had electricity. The television was on the whole day for news and my heart felt a constant pinch every time I see people suffering. They really had it hard. People in the roofs of their houses because the whole first level was already submerged in water, people needing food, and people in evacuation centers squeezing their bodies to be sure they are safe.  Some billionaire can give them TAG Heuer watches and they’d thank you just as much as if you give them a plate of rice.

Cinnamon Muffin

I wanted to bake something bready one time so I again searched the net for a simple recipe that calls for simple ingredients that I already have. I happen to crave for something with cinnamon so I chose this recipe.

Ingredients

  • 1/4 cup butter, softened
  • 1 1/8 cups sugar, divided
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup 1% buttermilk
  • 1 teaspoon ground cinnamon
  1. In a large mixing bowl, beat butter until light and fluffy, about 1 minute. Gradually beat in 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking powder, baking soda and salt. Add to creamed mixture alternately with buttermilk just until mixed.
  2. Transfer half of the mixture to a 9-in. x 5-in. x 3-in. loaf pan coated with nonstick cooking spray. Combine cinnamon and remaining sugar. Sprinkle three-fourths of mixture over batter. Top with remaining butter and sprinkle with remaining cinnamon mixture.
  3. Bake at 350 degrees F for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
*I added raisins, about 1/2 cup.
This is really good and very easy to make. Also, I just love the smell of cinnamon that fills the house whenever I bake this. But this recipe has inspired me to bake my tiny raisin cinnamon rolls. That’s more flavorful, has more cinnamon and has more love. I might have a problem with kneading though. Ah pregnancy….
Penne in White Sauce with Beef

Alright, I had a hard time naming this recipe because this is a made up recipe I didn’t even know about before.

I was supposed to make some Baked Ziti. I want it with bolognese sauce and bechamel sauce.  But what I wasn’t aware of is that I don’t have spaghetti sauce in stock so I just went ahead and sauteed the beef and sausage until I have the spaghetti sauce hopefully a few hours later.

I also went ahead and made my dependable bechamel sauce recipe. The penne pasta was also cooked already.

Then hunger struck. I couldn’t wait for the spaghetti sauce anymore. So I just went assembled what I already have, the sauteed beef with sausage and herbs and the bechamel sauce. Was I completely surprised that this tasted really good! I didn’t even miss the red sauce. Now this is a recipe I will keep on preparing from now on. 🙂
