Most burgers nowadays are just so disappointing and I can’t help but feel scared for my baby’s health and feel cheated as the burger usually isn’t worth my money. So I decided to make my own. I thought, “How hard could it be?”. And I also want to use my meat grinder.
This is the second batch on the same day. Shows how much I like it.
Reminds me of Jollibee’s Burger Champ. To be honest and bias aside, I believe this taste even better! Just good old fashioned meaty beef goodness. From the first batch.
I have to start with good quality meat. The ones you can buy in the supermarket are packed with too much fat so no can do. I had no idea with cut of beef is best for making your own patty so I just settled with sirloin. Next time I’m using chuck but I’m happy with sirloin as well. This is 96% lean.. almost no fat. I read you have to add in at least 15% fat to make your patty juicy but I just didn’t have it then. I just made a few addition of ingredients.
This is 380 grams of lean sirloin. Just for experiment purposes as I have never tried making this before and I have no reliable recipe to rely on. Don’t want to waste too much beef if ever this fail. (Good thing this is a very big success!)
I throw in a small onion in the grinder and 1 inch stalks of celery as I couldn’t be bothered to mince both.
There’s also garlic powder, salt, pepper, hoisin sauce, an egg and bread crumbs and butter. I like my patty not too thick as I want to be able to bite my burger with everything on it.
I weigh and flatten this then I used wax paper in between then froze half of this. The other half is for testing. I let it rest in the fridge for 30 minutes.
I used my non-stick grill pan. I also like cast iron grill pans but I’m still getting used to seasoning all my cast iron pans and sometimes using non-stick is just easier. I added a few drops of oil to ensure juiciness. I had to make up for lack of fat in the patty.
At this point as I was already way too eager to taste the patties. I wanna know if I succeeded or not.

I grilled my buns as well. Then added a tablespoon of mayonnaise and sliced some tomatoes and cucumber. Lettuce would be a great addition as well but I just didn’t have it on hand. There’s cheese too which isn’t in this photo. I also added a tablespoon of ketchup/catsup.
My cheese is way too wide for the bun I bought. That’s why the beef was hidden in this picture.

I am so happy this turned out better than I expected. The beef is so juicy even with the lack of fat. Hmmmn From now on I’m making our own burgers and no more buying from supermarkets and fast foods. This is miles better. Actually there’s no comparison.
Next time, I’ll try to buy better burger buns and if I can’t find one I truly like then I might as well bake my own.
