Why I can’t sleep

I’ve been enjoying good night sleep for almost a month now. Wow I can’t even begin how happy I am with this. I no longer wake up feeling even more tired than the night before I went to sleep. I have been feeling refreshed and have that feeling of not wanting to get out of bed again. Before when I woke up so tired I can get out of bed in a snap.

I accidentally discovered the reason why I had such bad sleep before. When I took medication for a condition I didn’t know I had and slowly got healed, I also slowly was able to have great sleep. I realized it is because of the condition I had. Now I’m healed and I sleep like a baby and only now that I am healed that I realized just how serious not getting good night sleep has been doing to my body. I always had bad headaches, my body aches like crazy, I’m always dizzy and I gained weight so much. I also found it hard to lose weight, it doesn’t help that I’m always hungry. I read lacking sleep does that to you. And you will really need fat burners that work because lack of sleep makes your body store fat like if it is in emergency mode to survive.

How To Make Homemade Yogurt

This experiment started in Youtube. I was watching how factories make loaf breads and frozen pizzas then I came across yogurt making.

I love yogurt. I really love yogurt. Started when I was all about healthy stuff, choosing healthier alternatives to the usual bad stuff like ice cream and it grew on me really well. Now I prefer some tartness than the all out sweetness of ice cream.

In Youtube I saw that they  use the oven to incubate (you need to incubate the good live bacterias to make yogurt) and I don’t like that because Philippines has power rates higher than Singapore grrr! So I thought why not make it using the slow cooker? I researched about it and yes many people have done it using the slow cooker. So I read some more and I planned about buying some milk and some plain yogurt to start my experiment. I want to go all out with yogurt. I can’t do that with Nestle’s Melon flavored yogurt with Nata de Coco which is my favorite. So expensive! It costs half a liter of milk for a very small container.

Johnny Air’s Bad Customer Service

EDIT: AS of November 04, 2011, STILL NOTHING! Heard nothing from them and to be honest, I’m not expecting anything from them anymore. But never again will I bring business to them. 
Totally bad service is something I cannot take. But living in the Philippines makes you prone to this. I do not get why this is because Filipinos are naturally nice and hospitable people specially to those they do not know personally. What I cannot take even more are people who feel so mighty high that they do not know how to own up to their mistakes and say sorry. Just that, a simple sorry will work and then try to improve and correct such mistakes.
I am writing to whoever upper level management executive who can take some action with this situation I unfortunately had experienced again. If Johnny Valdes gets to read this, the better.
Let me tell you what happened. I ordered a carbon steel wok from Amazon second week of December 2009 and conversed with Analyn Diego. I just had a very simple instruction, that the wok be brought to your Buendia/Dian branch as I prefer to pick the package there. Then after a month I was informed that the package was already there and ready for pick up. When my father and I got there, they had no idea about my package. They looked around them then told me it’s not there. And they had no initiative to find my package. I was the one who told them to look in other branches as I knew then that Johnny Air has a branch in Megamall. That was the time they made a call and that’s when they informed me that it was in Salcedo Village branch. My only instruction, to send it to Buendia / Dian branch was neglected. We decided to just drive to Salcedo Village and when we got there we weren’t given any attention by the female clerk whom I believe is Christine I am not really sure now. So the very first encounter I had with Johnny Air then (January 2010) was terrible but I thought maybe it’s because they are new and SOP’s aren’t well established then. But I must be honest that I almost lost my temper with the horrible service I received with all three of your staff and of the package being lost, lack of initiative is unacceptable too. But i just let it go.
Best Pizza

I have baked so far. What do I look for my pizza? First is the crust. I want it not too thick and not too thin. I need it to be a bit chewy but is crunchy as well. Then for the toppings I I prefer more veggies and cheese than meat.

After trying way too many recipes online, I finally have a recipe I could depend on. Thanks to Mommy who bought an old issue of a local food magazine where there was a promising and very simple recipe for pizza crust. Not many ingredients, just flour, salt, yeasts, water and oil. That’s it.

My Easy, Kind of Tom Yum Goong with Noodles

Hunger and desperation make one very creative. Also I am in the mood for something sour (continuation of my sinigang craze) and a bit spicy. Plus I had some rice noodles I pre-soaked the day before for a pad thai I was planning to make but I stalled that I need to use. For some reason I like rice noodles. I like it in soup and I like it in char kway teow.

So I did some reading online and then I started to cook. I picked up a real nice trick in cooking prawns and that is to pre-fry it to get all the flavors out of the head. Then add some water and let it boil. Add in the noodles and some chili paste and sinigang mix. use whatever’s available right?  This turned out really well, more than I hoped for. I know it’s far from the real Tom Yum Goong but this reminds me of that. I am so proud of this experiment, I’d cook this for my Bee who happens to have a new gadget and the otterbox iphone 4 is perfect for it, let’s see. ♥♥♥


Sinigang na Baboy

Been craving for Sinigang na Baboy (Pork in Tamarind Soup) recently so I let it over power me. 🙂

This is sinigang my way. Just perfect.

I am very particular with my sinigang though, well like with the other dishes I cook. I NEED native yam first, without it then I’d rather not cook this sinigang at all. Then I need pork belly ( liempo). This is just the perfect cut of pork for this. Then I need completely ripe red tomatoes. Then fresh okra, sitaw (string beans), labanos (radish), kang kong (water spinach) and talong (eggplant) which is optional in this dish. I just don’t like eggplant wet, but I would kill for fried eggplants yummm!

Going back to sinigang, this is how I cook this. I boil the cut up pork belly in not much water with onions and tomatoes with fish sauce. Then I add in sitaw with gabi. (I like my gabi real soft.) Then after a minute I add in the okra and labanos. Then talong and kang kong. Then season with tamarind and salt.

To those new moms out there, have your baby monitors on and savor this delicioso sour soup, this will surely revive you.

I could eat this for like a week straight. Rediscovered love for sinigang is sweet. ♥☻♥☻♥

My family and I are not really big pork eaters but recently, I am often finding myslef craving for pork dishes and enjoying eating them once i have it. We had a left over Crispy Pata (deep fried pork knuckle from Mommy’s office) and I instantly knew what I would do with it.

Yvoh’s First Birthday

Yvoh is my godson and time really goes by so fast I was surprised he’s grown that much. The last time I saw a picture of his was when he was still a new born. Tsk tsk… Now he’s almost a year old and looks like this.

I’m sure my friend (his mother) is already sending out his first birthday invitations as early as now. I can’t wait to hold this cutie pie in my arms and play with him! I’m sure he’s got his mother’s funny personality then we sure would have a good time.
